BlogBite: Mississippi Roast Recipe

NAILED IT! No seriously, I successfully made a slow cooker meal. WOO!




No, it didn't look like this. However, I will share some real pictures. Not doctored, foody pics -- the real deal. So GET READY.

This probably would have gone great with a roll and a salad. But I'm not a machine. Let's not get too crazy with the dinner expectations.


This recipe is pretty easy to find online, but everyone tends to do it a little differently. I even changed it up a little myself. Guess I was feeling sassy today.


The Ingredients

  • 2.5-3lb chuck roast

  • 1 stick of salted butter

  • About 1 tsp of olive oil

  • 1 onion soup pack

  • 1 pack ranch dressing mix

  • pepperoncinis

  • salt and pepper


Other needs

  • slow cooker

  • skillet

  • tongs

  • appetite

  • potatoes

  • 8 hours of kill time


I despise those recipe pages that talk for an hour about their fancy lives before telling me how to make the food. I just need to feed my family something decent, Janet. Get to the point.


So here are the steps!

1. Prepare a skillet - turn it on high heat and drizzle the olive oil in the pan.

2. Pat the chuck roast dry with a paper towel, and season with salt and pepper to your liking.

3. Sear the chuck roast in the skillet, applying each side to the heat for about 2 minutes to give it that nice brown color.

*Searing is not a must. It's just supposed to add extra flavor.

4. Move your chuck roast to the slow cooker. Add in the onion soup and ranch packets, the pepperoncinis and the stick of butter.

5. Set your slow cooker to low heat for 8 hours and 15 minutes. Mine was actually done before this, so you might want to set your phone for 7 - 7.5 hours to do a spot check. It just depends on the size of the roast.



That's a butter smudge on the inside. Judge away.

You will not need to add any water or anything else to the cooker. The meat juice will be sufficient. The roast should shred easily when it is done.


I served mine with mashed potatoes. Now don't think I homemade those bad boys. No sir. Bob Evans did a fine job for me.





We are a family of 5 - we ALL ate this for dinner - the adults had seconds, and we had one serving remaining to pack for my husband's night shift meal. I'd say that's pretty good!
